Cooking: Salsa & Homemade Tortillas

I can remember when my grandma lived with us, she would wake up at the crack of dawn, maybe even before, and when I woke up in the morning there would be about 2 giant stacks of tortillas ready to eat. She was still making the last of the batch so I would always sneak a hot one and eat it with butter. When we would visit her she would always be giving all her grandkids the best bean and cheese burritos. YUM! 

I have been thinking about this lately because I have been following Money Saving Mom, who I discovered on Periscope and I have to say, she has really been inspiring in the morning to just really have a better attitude toward my day and to challenge myself each day. Waking up early isn’t easy! But it’s worth it. I can remember days when I had to wake up earlier than I do now and there is something about watching the sun rise and being awake before anyone else is, that just feels so amazing!

I would love to get up like my grandma, and my family waking up to the smell of something delicious! I am sharing a video today. Spectrum is a TV show hosted by my very own pastors. On this show they have a cooking show and on this particular program we learn how to make homemade salsa and tortillas! You can find the ingredients listed after the video. Enjoy! I know I will!

Salsa Ingredients:

  • 6    tomatoes (chopped)
  • 4    jalapeno peppers
  • 1/2 onion
  • 1/4-1/2 c. cilantro
  • 3 garlic cloves
  • 1 1/2 -2 tsp. ground cumin
  •  1 tsp. salt
  • 2 tbsp. lemon juice

Tortilla Ingredients:

  • 1 1/2 c. all purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4-1/3 c. lard
  • 1/2 c. of water

Now the tortillas that are shared above are more of what we would call “Sonora” style. I grew up on a different kind of tortilla that was made with vegetable oil and not lard. Here are the ingredients for those tortillas (however they are both DELICIOUS!):

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ⅓ cup vegetable oil
  • 1 cup warm water

Please note, my mother always told me to use warm water and I forgot this at some point and used cold water and my dough was very tough to work with. The warm water kept my dough fluffier. I hope you are having a wonderful day and let me know what you think!
